Chef Prot Stitpittayayut knows his way around a pastry. With 15 years of experience and a résumé that includes stints at Eleven Madison Park and The NoMad in New York, he brings a style that’s equal parts classic technique and creative innovation. Now back in Thailand, he’s been shaping minds (and sweets) as a pastry instructor at The Food School before joining us at the helm of our menu at Tease.
