This January, Decimo welcomes the Michelin-starred Mexico City collective Masala y Maíz for the fifth edition of La Mesa, our collaborative dinner series celebrating global food cultures. Led by chefs Norma Listman and Saqib Keval, Masala y Maíz is known for its genre-defying cuisine rooted in the culinary lineages of India, East Africa and Mexico— the shared heritages that inform their acclaimed, deeply personal cooking. 

Following a research-driven trip to Mexico City, where the Decimo team cooked and collaborated with Norma and Saqib, this residency brings that dialogue to London for a multi-day experience centred on migration, maize and diasporic storytelling. Expect an à la carte menu shaped by Mexico City’s vibrant markets, native maize traditions, and cross-continental ingredients that trace pathways through India, Kenya, Ethiopia and California. 

Decimo’s Head Chef Paola, herself a Mexico City native, reflects on the collaboration:
