Opening in 2026, The Standard, Lisbon marks our long-anticipated arrival in one of Europe’s most happening cities. Located at Palácio Santa Clara, the hotel rises above the colourful alleyways of Alfama—Lisbon’s most picturesque neighbourhood—offering front-row views of the river. Built atop the ancient College of St. Francis Xavier, which served as the Portuguese Royal Navy Hospital for over 200 years, the property is being reimagined by acclaimed architect Samuel Torres de Carvalho. His design respects the building’s heritage while looking ahead to a bold, unconventional Lisbon.

Anchored in food, music, art, and culture, The Standard, Lisbon brings our signature design and experience-driven philosophy to Portugal. With 165 guestrooms and 24 adjacent apartments, the expansive property features vibrant spaces for day- and nightlife programming. The ground floor welcomes guests and locals with a lobby lounge, pharmacy bar, all-day dining restaurant, and multiple terraces, gardens, and a pool deck. Upstairs includes a café, spa, gym, and event spaces. The rooftop bar and terrace are poised to become a neighbourhood destination.

As we enter our pre-opening phase, we’re now looking for a Sous Chef to join our kitchen leadership team and help bring our culinary vision to life. This role will report directly to Executive Chef, Fer Serrano, who’s globally influenced, ingredient-led approach will shape the culinary identity of The Standard, Lisbon, which promises to be ‘Anything but Standard’

Your Role

Our Restaurants, Bars, Clubs and Rooftop terraces are legendary, and The Standard is synonymous worldwide as shining beacon for Nightlife. As Sous Chef, you will support the day-to-day leadership of the kitchen at The Standard, Lisbon, working closely with the Executive Chef and Senior Sous Chef to deliver a high-volume, quality-driven culinary operation. This is a hands-on role suited to a confident and motivated chef who thrives in fast-paced environments and leads by example.

You will play a key role during service, supporting the management of the pass, coordinating sections, and ensuring dishes are executed consistently and to the highest standard. You will assist in supervising the brigade, delegating tasks effectively, and stepping in to lead sections or services when required, maintaining calm and focus under pressure.

Beyond service, you will support core kitchen operations including ordering, stock control, preparation planning, and adherence to food cost targets. You will contribute to menu development, recipe testing, and seasonal changes, ensuring quality, flavour, and presentation remain aligned with the overall culinary vision.
You will also play an important role in training and developing junior team members, fostering a positive, respectful, and disciplined kitchen culture. With a strong understanding of food safety, hygiene, and health & safety standards, you will help ensure compliance is always maintained while continuously looking for opportunities to improve consistency, efficiency, and ways of working within the kitchen.

This is not a ‘Standard’ Sous Chef role so you will need to have serious stamina and passion, be highly social, upbeat, and friendly; confident and handle pressure well; thrive in a high-volume, high-energy environment and able to work equally well both independently and as part of a wider senior management team.

Do you have what it takes to be our Sous Chef at The Standard, Lisbon...

Proven experience as a Sous Chef or strong Junior Sous Chef in high-volume, quality-driven kitchens ideally gained within a similar Lifestyle Hotel or premium destination restaurant in Lisbon or Portugal,

In addition to this you may also have….

• Pre-opening Hotel or Restaurant Experience is an advantage
• Strong organisational skills with the ability to support kitchen operations and service delivery
• Confident supporting service, delegating tasks, and leading by example
• Experience assisting with menu development and execution
• Solid understanding of food safety, hygiene, and health & safety standards
• Ability to maintain quality, consistency, and efficiency in a fast-paced environment
• Good communication skills with the ability to work collaboratively within a kitchen leadership team
• Passion for ingredients, technique, and continuous learning
• A good understanding of the Lisbon Restaurant & culinary scene, the latest trends and hot new places to go.
