Course 2:
Duck Confit: pan seared duck breast, crispy shredded duck leg, red beet risotto, shaved manchego, orange apricot demi glace
Paired with Glenlivet 14: cognac cask 14 year aged, single malt speyside scotch
Course 3:
Bone In Cowgirl: charred bone in cowgirl ribeye, duxelles cream, truffled herb butter, root vegetable gratin
Paired with Aberlour: double cask matured 12 years, speyside malt scotch whiskey
Course 4:
Cinnamon Apple Bread Pudding: brioche bread, braised apples, silvered candied almonds, cinnamon ice cream, cognac creme anglaise, candied orange peels
Paired with Jefferson Reserve: bourbon barrel select, small batch bourbon
