Bar / Beverage Manager

Job Purpose:

 

The Bar / Beverage Manager is responsible for the management of all aspects and functions of the bar outlets, in accordance with hotel standards. Directs, implements and maintains BAR service within the Hotel, and ensure that customers are served promptly & courteously. Additionally oversee hygiene and safety regulations. Motivate & lead the departments to work as part of the wider hotel team in order to promote a positive image of the Hotel at all times.

 

Basic Function:

  • Source and train staff to best fit the bar's needs
  • Schedule staff in an efficient manner to best cover the demands of the customers
  • Communicate with vendors to assure the appropriate amount of products are on hand for the forecasted demand
  • Resolve all staff conflicts swiftly and properly
  • Assure all transactions and banking are conducted with no variance
  • Work shifts required to meet the needs of the bar. This may include nights, weekends and holidays
  • Spend busy nights glad-handing customers to ensure their dining experience is the best

Duties and Responsibilities:

  •  A strong focus on hiring requirements resulting in finding the best available talent
  • Ensures that the TM are motivated, self-starters & willing to learn and improve their knowledge on their own without being forced
  • Ensure that you and all TM follow all set SOP’s (Hotel as well as Food and Beverage)
  • Create front of house OSE Par stock for his / her outlets for distribution and usage.
  • Assists DOFB during to create, maintain and adjust if necessary departmental SOPs.
  • Supervise daily restaurant operations with a strong presence on the floor and assist the team on the floor during peak service times
  • Ensure that all employees report for duty in the outlet with correct uniform in a timely manner.
  • Ongoing control and enhancement of quality standards and guest services.
  • Work with the stewarding team to ensure that all equipment needs are met, and all equipment is properly maintained / inventoried, and all loss is minimized.
  • Creation and implementation of guest preference programs.
  • Working with his / her team to create new opportunities for upselling to increase revenue & profitability
  • Ensuring a safe and healthy work environment for all colleagues.
  • Ensuring all training manuals, processes for the work area are in place and executed.
  • Ensures all required departmental meetings are consistently & meaning full conducted.
  • Plays a significant role in maximizing financial performance and attracting hotel and non-hotel guests.
  • Assist with the creation and execution of the beverage budget and forecast.
  • Assist with the creation and execution of ihe F&B marketing plan.
  • Supports public relations opportunities to promote the restaurant.
  • Provides direction to team members through coaching, guiding, and celebrating.
  • Identifies the development needs of others whilst coaching to improve their knowledge and skills.
  • Manage staffing levels to meet guest service standards, operational needs and financial objectives.
  • Conducts performance management & reviews for all team members.
  • Conducts, if needed, disciplinary actions as per HR set policies
  • Not limited to the above, work in any area & capacity as seen fit by the management
  • Encourage all TM to take part in F&B, hotel & HR related activities
  • To create all kind of exiting alcoholic & non-alcoholic beverages incl. but not limited to cocktails, mocktails, smoothies, tea (cold & hot), coffee (cold & hot), infusions, syrups, soda’s, kombucha’s, wellness drinks,. fitting for each outlet individually
  • Provide a unique beverage program, tailor made to each separate outlet to create unique experiences all over the property
  • Develop exiting & affordable beverage options for afternoon give away at the pool area
  • Develop exiting & affordable beverage options for welcome amenity
  • Develop exiting & affordable beverage option as welcome drinks at front office & control the quality served
  • Constantly train and motivate team members on new beverage solutions as well as encourage them to actively take part in the process of develop new experiences
  • Actively search & re-search the newest trends in F&B / Cocktails / Bars to stay ahead of the curve
  • Monitor all beverage related costs (os&e / beverage cost, labor cost,...... )
  • Advise the restaurant manager, supervisor (if applicable) & DoFB for suggested selling prices of beverages
  • Ensure all recipes are proper costed
  • Ensure HACCP as well as any safety and hygiene SOP’s are followed & if no such standard exist for a task, you create one and give management for approval
  • Together with your team attend single & team beverage / cocktail competitions to promote our brand (cocktails / coffee / mocktails,............................. )
  • Develop & create our own line of beverage products for retail sales (alcoholic & non- alcoholic)
  • Programing of exiting Bar / Beverage events at all outlets incl. pool & beach area’s
  • Programing and creating of exiting promotion and sales events for bar / beverage products
  • Create & develop unique, one of a kind and out of a box thinking beverage experiences for the hotel (only NO idea is a bad idea)
  • Ensure all F&B staff always follows all beverage recipes at all times
  • Ensure all F&B staff follows all beverage serving standards at all times
  • Ensure all F&B staff follows all beverage related hygiene & cleanliness standard at all times
  • Ensure all F&B staff is aware of all Alcohol & Beverage related laws & regulation and following them all the times
  • Maintain a strong guest relation attitude and actively encourage conversations with guests at all different service times & outlets on property to get a good and complete feedback of guest expectations and feelings
  • Knowledge of mixing and matching ingredients to offer an outstanding selection of creative cocktails, non-alcoholic drinks, spirits, beers and wines and be able to garnish all drinks as per the given standards and explain their characteristics.
  • Ensures that the Standard Drink Appearance File (SDA) is regular updated and that all TM have unlimited access to it and also follow it
  • Lead the bartending team in all day-to-day operations whilst working the rail and train staff on recommending, promoting and upselling beverages.
  • Maintain high staff morale and team spirit.
  • Understand beverage control procedure including days on hand, perpetual inventory, bar pars, portion control, costs controls, beverage potentials and mix of sales analysis for beverage.
  • Check the inventory daily before each shift to assure correct amounts are stocked up to avoid running out of stock during service periods.
  • Responsible for ensuring the checking of temperature of the bar fridges and follow the First in, First Out standards.
  • Ensure compliance with all food and beverage policies and procedures as well as applicable beverage and liquor laws with responsible service of alcohol.
  • Be well versed in all necessary Hotel brand standards and history and ensure all direct reports are likewise versed.
  • To always take corrective action if service errors occur ensuring all solutions exceed the guest’s expectations.
  • Coaches, guides and supports team members to ensure their capabilities and degree of professionalism meet the needs of guests and the hotel.
  • Attend meetings with senior management to discuss future business strategies and review ongoing action plans and progress.
