Your Summer Plans: Small Bites, Poolside

In warm weather, when the cool breeze is whipping up the canyons, there’s no better place to be than on the blue Astroturf of The Standard, Hollywood — especially now that serious Small Bites are in effect. Pull up a pool chair, grab a pink donut floatie or a Ping-Pong paddle, order a drink, and pick from a menu with twists at every turn.

First choice is bound to be a Lobster Roll on a buttery toasted brioche bun overflowing with sweet white meat and folded with celery, herbs, lemon juice and aioli. A slaw of shaved fennel, Fresno chiles and red onion adds welcome crunch and kick.

Toast is everywhere these days, but rarely so impressive as The Standard’s Market Toast ($12). Crusty bread dressed with olive oil comes slathered with avocado and topped with silky gin-cured salmon stained purple with beet juice. Slices of boiled egg, still sticky at the center, join cilantro and Italian parsley as complementary toppings.

Rolling with a crew? The colorful House Made Vegetable Chips ($6) crafted from beet, taro and potato with tangy crème fraiche dipping sauce is ideal for sharing. For those looking to maintain their bikini (or Speedo) bodies, The Standard’s also got Baked Kale Chips ($8) seasoned with salt and vinegar.

Comfort food also has its special place in the sun. Dry-rubbed Baby Back Ribs ($12) sport a tangy fennel, onion, honey and apple cider glaze and cook low and slow until the pork slides right off the bone. Buttermilk Fried Chicken Sliders ($12) feature tender, lightly battered thigh meat topped with spicy slaw and tart pickles.
